Ce inseamna pentru mine masa de Craciun? Inseamna momentul in care suntem toti impreuna, cand indiferent daca friptura e perfecta sau am uitat-o putin prea mult in cuptor, suntem cu totii fericiti. Craciunul nu trebuie sa fie perfect, Craciunul trebuie sa fie al vostru. Asa cum il doriti voi, asa cum va iese, mereu surprinzator. Aceastea este ideea pe care Lidl a construit conceptul campaniei #BeautifullyNormal: militam pentru un Craciun natural, care in ochii nostri poate fi perfect, indiferent ce s-ar intampla. Si micile intamplari sau situatii neprevazute fac sarbatorile si mai speciale, sunt sigura!

Cea mai draga intamplare de Craciun si prima de care mi-am amintit ca fiind #BeautifullyNormal? Primul Craciun cu Luca, in care am facut un stoc de scutece si toate cele trebuincioase noului venit, am facut 7 prajituri si mancaruri diverse pentru musafirii care veneau sa il viziteze, dar am uitat sa cumpar cadouri pentru tot restul familiei. Am realizat asta numai in momentul magic cand trebuia sa schimbam cadouri. In prima faza am simtit un nod groaznic in gat si am simtit ca am stricat Craciunul tuturor. Apoi m-a salvat mama, care a lipit etichete noi pe pachete si a scris “de la mama Lucia si Teodora” 🙂 A fost cel mai frumos Craciun, primul alaturi de Luca!

Masa harina is an unsung food hero that is responsible for the taste we love and associate with tortillas, tamales and gorditas. That unique flavour is hard to replicate but once in a while, you may need something you can use in place of the almost incomparable masa harina. There are a few decent substitutes for masa harina and which you want to go for will depend on whether you are looking for a texture replacement or a taste substitute. While it’s very popular in Latin America and communities with a heavy Latin American influence it is not easy to find in the rest of the world.

What Is Masa Harina?

Masa harina is a maize meal that has a different process of preparation that also gives it its unique taste. Masa harina is the dried and powdered form of the maize or cornmeal that goes through a process called nixtamalisation. Dry maize or corn is cooked with an alkali agent, either lime or wood ash, and left to soak for hours after it cooks through. It is then thoroughly rinsed the product is then called hominy. The hominy is then crushed into a dough that is fairly dry and we now have masa. Masa harina or masa de harina is the dried version of this dough. Masa harina means dough flour in Spanish. After going through the process involved in making masa harina it seems a daunting task. However, 10  contenders may have something to say about that.

Corn Meal

Cornmeal is a good masa harina substitute because of its wide availability. Cornmeal is however ground from dry corn and will likely not be as fine as masa harina and may require further processing to get it to a state where it’s close to it. You can blend it once mixed with a liquid to bring it closer to masa harina’s fineness. On a taste level, cornmeal is not close to masa harina because of the flavour masa harina inherits from nixtamalisation.

Grits

Grits is a good substitute for masa harina. Grits is a cornmeal porridge flour that is fairly widely available. Depending on where you are you may be able to find hominy grits which have also gone through the nixtamalisation process and therefore match the flavour of masa harina outright. Outside of hominy grits, you will generally find corn grits on the market which do not match masa harina as well as maize grits.

Wheat Flour

Wheat flour doesn’t go through a process anything close to what masa harina does so it’s safe to say that from a taste perspective it will not match masa harina. The best thing to do if possible is to make a small batch of the recipe first to see if wheat flour will provide an appropriate flavour. Texture-wise wheat flour is very fine and a good match for masa harina. It’s widely available so if you’re in desperate need of a substitute for masa harina you won’t go to great things to locate this one. Just note that wheat flour does contain gluten so if you’re looking for a gluten free masa harina substitute wheat flour will not cut it.

Corn Tortillas

What better to substitute masa harina than something made from masa harina. Tortillas are made from masa harina so they do make a great substitute if that’s all you have and can find. The best way to use them is to put them in a blender and grind them up until you get a fine powder from them. A word of caution though, avoid using any flavoured tortillas. They tend to be heavily flavoured and this can easily affect the taste of your food. If what you’re after is a thickening agent this will work well.

Corn Taco Shells

Tacos just like tortillas are usually made from masa harina so they make a good substitute for masa harina. It’s best to make sure that the taco shells are made from masa harina by checking the ingredients. You may also find some taco shells are made from masa preparada which is also acceptable though varieties which have lard in them may not be the wisest choice depending on the recipe. The principle is the same as tortillas, grind them in a blender or food processor.

Corn Starch

Corn starch is a great masa harina substitute being made from corn as masa harina is. So corn starch will provide a decent masa harina substitute from a flavour perspective. Corn starch is however much finer than masa harina and it’s best to use it in a recipe where the masa harina is used a thickening agent such as soups. Corn starch is also very easy to find so that works in its favour as a masa harina substitute.

Fresh Masa

Fresh masa is the step of masa harina preparation between hominy and drying to become masa harina. This, of course, makes fresh masa a good substitute for masa harina. If you’re making tamales you might find that fresh masa is not only a substitute but also an improvement on masa harina. For other recipes, fresh masa also makes an adequate substitute.

Masa Preparada

Masa preparada is another masa harina substitute that offers a few benefits of masa harina. Many regard it as being the better of the two in flavour and utility. Masa preparada does, however, cost more and is also harder to find than masa harina so it does have some drawbacks.

Arrowroot Powder

Arrowroot powder is made from a plant called arrowroot which looks somewhat like a sweet potato. The powder is starchy and makes a good substitute for masa harina. Arrowroot powder is a great texture substitute for masa harina. Arrowroot powder has no discernible taste and therefore doesn’t make a good masa harina substitute from a taste perspective. You may find other ways to substitute the flavour since arrowroot powder has none so that is a bonus.

Polenta

Polenta is a food of Italian origin that is similar to maizemeal, cornmeal or grits. The most common versions of Polenta are made from corn but you can find experimental varieties that include millet, farrow and chestnuts. Polenta is to its credit just as easy to use as masa harina. You can find it in coarse or fine variety. It is very widely available.

There are many perfect substitutes for masa harina from a texture perspective. The unique flavour of masa harina that it gets from the nixtamalisation process is much harder to replicate.

La pizza es una de nuestras comidas favoritas, y desde que descubrimos hace anos lo facil que era hacerla en casa, nunca nos falta masa en el congelador.

Hace tiempo publicamos la receta de masa de pizza que usabamos, basada en la de nuestro querido Jamie Oliver, pero con el paso del tiempo ha variado un poquito, asi que queriamos compartir esta masa de pizza con KitchenAid.

Es la misma receta que veniamos usando antes de tener la KitchenAid, asi que no os preocupeis, sin robot amasador esta masa sale igual de bien.

Ingredientes para tres pizzas de unos 26cm

– 500gr de harina de fuerza
– 325gr de agua templada
– 20gr de levadura fresca (o 7gr de levadura seca de panaderia)
– 2 cucharadas de aceite de oliva virgen extra
– Media cucharada de sal

Elaboracion de la masa de pizza

Lo primero que hacemos es mezclar en un recipiente el agua templada (no caliente) con la levadura y el aceite, y dejarlo 5 o 10 minutos para que la levadura se active.

Pasado este tiempo echamos mas o menos la mitad de la harina en el bol en el que vayamos a mezclarlo todo, anadimos la mezcla de agua, levadura y aceite y le damos cana con el brazo amasador a velocidad 2 (si no tenemos robot simplemente mezclar con las manos o con una espatula).

Mientras se va mezclando todo seguimos anadiendo el resto de la harina junto con la sal, para que se vaya incorporando bien.

Llegara un momento en el que se haya formado una masa y el bol este casi limpio. En este punto podemos parar la maquina y dejar reposar la masa durante 5 o 10 minutos. A continuacion volvemos a darle cana a velocidad 2 durante unos minutos. Podemos repetir este amasado con reposo un par de veces.

Una vez terminado este proceso veremos que la masa tiene ya una textura muy suave y elastica. Sera el momento de sacarla a la mesa de trabajo y dividirla en tres bolas iguales. A cada bola le haremos un movimiento envolvente, como si quisieramos formar una bola perfecta y dejarla bien lisita por arriba pellizcando por debajo, y ya estaran listas para congelar.

El levado

Si quereis consumir una de las bolas el mismo dia (seguro que si) tan solo habra que dejar que doble el tamano (una o dos horas, dependiendo de la temperatura de la habitacion).

Cuando querais usar una de las masas que habeis congelado previamente, lo ideal es sacarlas del congelador y meterlas en el frigo el dia anterior. El mismo dia que queramos consumirla la sacamos del frigo unas cuantas horas antes, para que le de tiempo a templarse y despues pueda tener su horita o dos de levado.

Una masa de pizza muy facil y, mas importante aun, que siempre sale bien.

Ingredientes: Preparaci贸n:

1- Colocar la harina, la levadura, el az煤car y la sal en el bowl de la Batidora聽KitchenAid. Mezclar los ingredientes secos.

2- Mezclar en un bowl aparte el aceite y el agua tibia.

3- Encender la Batidora聽KitchenAid con el gancho para masa y vertir lentamente la mezcla de agua a trav茅s del tubo de alimentaci贸n.Mezclar hasta que se forme una bola de masa, y amasar un minuto adicional hasta que la masa est茅 suave. Si la masa queda pegajosa, agregar otra cucharada o dos de harina a trav茅s del tubo de alimentaci贸n. La masa debe quedar tierna y 鈥渓igeramente鈥 pegajosa.

4- Formar un bollo con la masa y colocarlo en un taz贸n aceitado, de tama帽o mediano. Cubrir con papel pl谩stico. Colocar en un lugar c谩lido hasta que doble en tama帽o, unos 45 minutos.

5- Tomar la bola de masa y amasar sobre una mesada espolvoreada con harina durante cinco minutos. Colocar de nuevo en el bowl, cubrir con aceite y dejar que leude de nuevo durante 20-30 minutos. Una vez leudada se puede colocar la masa en una bolsa y refrigerar hasta el d铆a siguiente, o se puede utilizar inmediatamente.

6- Dividir la masa en 3 partes iguales para hacer 3 bollos de pizza. Precalentar el horno a 250掳C. Rociar un molde para pizza con aceite en aerosol o colocar su piedra para pizza en el horno. Colocar uno de los bollos de masa sobre una mesada enharinada, y presionar con las palmas. Use sus dedos para continuar presionando la masa en un movimiento circular hasta lograr un c铆rculo de 30 cm de di谩metro. Colocar sobre el molde para pizza y llenar con la cobertura deseada.

Cooking Authentic Mexican Recipes In Cazuelas

Clay pots, or “cazuelas”, have been a part of our Mexican cuisine since pre-hispanic times, when many of the cooking instruments were made out of clay. Everything from the pots where the seeds were stored, to the larger pots (called “tinas or tinacos”) used to store drinking water, the decorated clay dishes in diverse sizes and shapes, as well as drinking cups. Even some strainers were made out of clay! 

Homes back then would have a kitchen with a clay comal (griddle) over a fire that was used for cooking tortillas, roasting peppers and seeds, and as a base where the clay pots and casseroles were placed on to cook the meals.

What kind of filling can I use?

The type of filling of chicken and green salsa can be different, the same way that we have other fillings for tamales: you can either use pork, beef, or cheese.

That’s the beauty of making tamales...the variety of fillings for them is endless!

Can I freeze this tamale casserole?

Yes, this is a very freezer-friendly casserole.

Bake it completely and then let it cool down. Then, seal it tightly with a lid or aluminum foil. Keep it in the freezer for up to 6 months.

When you are ready to reheat it, let it thaw in the refrigerator overnight and then reheat it in the oven.

How long will this chicken casserole last in the fridge?

If you keep it sealed with a lid, plastic wrap, or aluminum foil, it will last about a week in the refrigerator.

What is the best type of cookware for me to use to make this casserole?

This recipe requires an ovenproof dish about 8-9 inches in diameter or width. I will be using a cazuela (clay pot) to make it. You can buy a good-quality clay cooking pot at Ancient Cookware, but you can also use a square glass baking dish if you can't find one.

To make things easier for you, I am going to break down the directions to this recipe into sections.

Make The Salsa Prepare The Dough With Masa-Harina

Tip: Taste to check if the dough needs salt. It's so much better when the dough is actually seasoned and has some flavor. 

Seasoning The Chicken Prepare The Banana Leaves And The Clay Pot Assemble The Casserole In The Cazuela Bake and Enjoy!

Tip: You have to let the masa dough settle for at least 15 minutes before cutting to be able to get a good slice.

What To Serve With Chicken Tamale Casserole

This is almost an entire meal in one dish! It only takes a few simple Mexican side dishes to really round out the meal and make it completely filling.

Fresh corn salad with purslane is zesty and flavorful. Black beans and rice is another very popular choice for dinnertime sides. It is really easy and everyone loves it.

Or, serve it with a sweet side dish like a jicama and citrus salad.

Sometimes, I just serve a slice of the casserole with some fresh salsa verde and just eat it that way. It is all very delicious!
